Jollof rice with moi moi and beef or plantain and chicken

Jollof rice is one of our popular dish in nigeria mostly eaten at any time we desired or events such as wedding ceremonies, birthday parties and so on. Jollof rice consist of rice, tomato paste, fresh tomatoes, onions, spices such as (nutmeg, ginger, garlic, curry and thyme, bay leafs and other spices you wish to add) veg oil or olive oil, butter optional and other ingredient
Cooking method:
Fry your chopped onions,tomato and already grinded pepper and add all spices and seasonings including the stock (chicken or beef stock) preferably beef stock then wash and pour the rice into the mixture and put on fire. When it's done it's bring an adorable and attractive orange colour and the aroma will be so inviting! Then you can nw serve with either plantain,moi moi, Cole slaw or salad etc as desire. You simply can't resist eating more...I remember while growing up I loved eating rice and my parents will tell me 'one day rice will grow on your head'...lol! That's d extent I love eating rice.       Pupuru is commonly consumed by the people of riverine area of the western, southern,eastern and middle belt of Nigeria where it is known as "Ikwurikwu". It is an African traditional fermented smoked dried cassava food commonly consumed in south western Nigeria most especially people of Ondo State. It is not like garri, lafun or fufu which are all locally made from cassava but it has cassava as a common ingredient.
