Diabetic fruit cake!!!

                                                This is a healthy, and very nice cake without sugar, and it's best suitable for diabetics or for those who really wants to watch their weight, that is, you want to remain lepacious lol! Try this cake for grandmas and grandpas. Ingredients ; 4 tbsp or 2 oz margarine 4 tbsp or 2 oz shortenings  3 eggs  1 tsp vanilla Essence  3/4 cup or 3 oz flour 4 oz soft breadcrumbs  2 tsp baking powder  1 tsp cinnamon  1/2 tsp nutmeg  1/2 tsp grated lemon rind  8 sweetener tablet  1/2 cup water  4 oz grated carrot 2 oz mixed peel  2 oz black currant  Method ;  Step1. Cream fat in mixing bowl. Step2. Beat eggs and vanilla, add to creamed mixture. Step3. Mix flour, breadcrumbs, baking powder, cinnamon, nutmeg, and lemon rind.  Step4. Mix sweetener tablet with water  Step5. Gradually add flour mixture to creamed mixture alternatively with water. Step6. Stir in carrots, mixed peel and currants. Step7.

HOW TO MAKE DELICIOUS DODO FRITTATA

Dodo frittata is a simple, easy and special way to prepare plantain. It could be used as breakfast, lunch, or dinner, and also be served as a healthy meal for teenagers as it major ingredient plantain known as 'dodo' in Yoruba is mostly loved by children. Trust me it could even end up been a Sunday morning breakfast recipe in your home. INGREDIENTS 2 ripe plantains 4-6 eggs 1 green pepper 2 big tatashe pepper 1 medium size onion 1 cup bean sprout 1/2 teaspoon garlic powder 1/2 teaspoon dried oregano Seasoning cubes Salt to taste Vegetable oil to fry plantain DIRECTION -Cut fry or bake plantain -Slice vegetables -In a bowl mix all the spices and herbs. FOOD THAT RELIEVE MENSURATION CRAMPS

                              This refreshing fruit punch is either meant for festive seasons, parties and can also be taken at your leisure time. Try it and thank us later! INGREDIENTS; 3 cups orange juice 3 cups pineapple juice  3 cups grapefruit juice  1/4 cup lime or lemon juice  1/2 cup honey or to taste  1 cup freshly chopped pineapple  1/2-1 melon cube, balls lime or orange slices   METHOD; Step1. Combine orange, pineapple, grapefruit and lime juice.  Step2. Sweetened to taste with honey and chill for few hours.  Step3. Just before serving add chopped pineapple an melon balls. Step4. Garnish with either lime or orange orange slices, or strawberry (and serve with crushed ice).   For variation: substitute a small tin of fruit cocktail or fruit salad for pineapple and melon balls. Pasta with cheese burger!!!

                            Pasta with cheeseburgers is a delicious, healthy, and classic recipe for your family. Serves: 4  INGREDIENTS; 1/2 lb. spaghetti or macaroni  1 lb. ground beef  1 beaten egg 1/2 cup breadcrumbs  2 tbsp tomato ketchup  1 tsp salt  1/2 tsp black pepper  1 tbsp butter or margarine  1/2 cup chopped onions  1/2 cup chopped celery  1 can tomatoes, crushed  1/2 tsp celery salt  1/2 cup grated cheese  METHOD ; Step1. Break macaroni or spaghetti in 3 pieces and cook as indicated on package; drain it.  Step2. Combine ground beef, egg, breadcrumbs, ketchup, salt, and pepper  Step3. Shape mixture into 4 patties; brown quickly in butter, drain and keep aside.  Step4. Cook onion, celery in same pot until tender, add tomato and celery salt and bring to the boil, summer uncovered for 5 mins.  Step5. Stir in spaghetti and pour into a baking dish. Step6.                            Shrimp cocktail!!!  Hmmm here's an irresistible seafood dish that consist of cooked shrimps in cocktail sauce and served in a glass as an appetizer, you simply gottah love it. INGREDIENTS ; 1 tomato ketchup  1/2 tbsp cream of tartar  1/2 tbsp minced garlic 1 tbsp mayonnaise  1/2 finely chopped parsley  1-2 tbsp lime or lemon juice  1 tbsp Worcestershire sauce  1/2 tsp minced or hot pepper or hot sauce  4 cups finely chopped lettuce leaves or watercress  2 lbs cooked shrimps  METHOD ; 1. Combine tomato ketchup, onions, garlic, mayonnaise, parsley, lime juice, Worcestershire sauce, and hot pepper and chill for few hours.  2. When ready to serve put chopped lettuce in 8 serving dishes and place shrimps on top. 3. PIÑA COLADA!!!

Piña colada 1 cup rum 1 1/2 coconut milk 1/2 cup pineapple chunk 3 oz. heavy cream or evaporated milk 1/4 cup of sugar 12 cubes of ice Cherries and orange slices Method 1. Combine rum , coconut milk, pineapple juice, pineapple chunk, and cream in blender. (Process in blender) 2. Add sugar and Ice cubes (process until ice is crushed 3. ECLAIRS AND CREAM PUFF!!!

                    Eclairs and cream puff (Choux pastry) INGREDIENTS: 1 cup boiling water 1/2 cup or 4 oz margarine or butter 1 cup all purpose flour 3 or 4 medi eggs Choco glaze METHOD: 1. In a heavy sauce pan, place water an margarine and bring to the boil. 2. Add all the flour at once and stir over medium heat until the mixture leaves the side of the pan and forms a ball 3. Remove from heat and leave to cool for 5mins 4. Add unbeaten eggs once at a time beat well after each addition. 5. Shape or pipe mixture into oblong 4 inches by 1 1/2 inches finger shape on a lightly greased baking dish 6. Bake in a preheated oven at 375f for 40-45mins. 7. Cool and chill with filling 8. To make glaze; blend together 2/3 cup icing sugar, 1/3 cup of cocoa powder , 2 tbsp water and 1/4 tsp vanilla, spread on eclairs. 9. Coat top of eclairs with Choco glaze. Hmmm... Bon appetite!
