HOW TO MAKE DELICIOUS DODO FRITTATA

Dodo frittata is a simple, easy and special way to prepare plantain. It could be used as breakfast, lunch, or dinner, and also be served as a healthy meal for teenagers as it major ingredient plantain known as 'dodo' in Yoruba is mostly loved by children. Trust me it could even end up been a Sunday morning breakfast recipe in your home.

INGREDIENTS
2 ripe plantains
4-6 eggs
1 green pepper
2 big tatashe pepper
1 medium size onion
1 cup bean sprout
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
Seasoning cubes
Salt to taste
Vegetable oil to fry plantain

DIRECTION
-Cut fry or bake plantain
-Slice vegetables
-In a bowl mix all the spices and herbs. Transfer to a bigger bowl, mix all the vegetables and other ingredients you wish to add, maybe sausages, spinach, ham and others mix properly together
-Transfer content to a grease non stick pan. Set over low heat, cover with a lid and cook for 10 minutes, transfer to a preheated oven and bake for 5 to 10minutes until it is set.
-Here you have it, your dodo frittata is ready to be served. preferably warm.
    It is a healthy meal and highly nutritious. Its ingredients are readily available and accessable.
