This is a healthy, and very nice cake without sugar, and it's best suitable for diabetics or for those who really wants to watch their weight, that is, you want to remain lepacious lol! Try this cake for grandmas and grandpas.
Ingredients;
4 tbsp or 2 oz margarine
4 tbsp or 2 oz shortenings
3 eggs
1 tsp vanilla Essence
3/4 cup or 3 oz flour
4 oz soft breadcrumbs
2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp grated lemon rind
8 sweetener tablet
1/2 cup water
4 oz grated carrot
2 oz mixed peel
2 oz black currant
Method;
Step1. Cream fat in mixing bowl.
Step2. Beat eggs and vanilla, add to creamed mixture.
Step3. Mix flour, breadcrumbs, baking powder, cinnamon, nutmeg, and lemon rind.
Step4. Mix sweetener tablet with water
Step5. Gradually add flour mixture to creamed mixture alternatively with water.
Step6. Stir in carrots, mixed peel and currants.
Step7. Place mixture into greased and papered cake pan.
Step8. Bake in preheated oven at 352f for 1hr or until done.
