COCONUT SHORTBREAD!

                     


Coconut shortbread is something you'll always want to do over and over again. Just try it and thank us later.

Ingredients:
1 cup or 8 oz butter 
1/2 cup castor sugar
1/2 tsp salt
1 egg 
3 cups flour
1 cup grated coconut
1-2 tbsp castor sugar (for dusting) 

Method; 
1. Cream butter well
2. Add sugar, salt, egg, flour and coconut, mix well and chill for 1 hour.
3. Roll out dough in 2-3 circles, 1/2 " thick on an  ungreased baking sheet or pie plates.
4. Crimp edges, prick top with a fork and mark a wedge shaped pieces.
5. Bake in preheated oven at 300 degrees F.  for 45-50 minutes (shortbread should be pale brown after baking).
6. Then, sprinkle with a little sugar, cool and cut.

                                  Ewa oloyin (Honey beans) Honey beans is a light brown, kidney shaped beans popularly known in Yoruba as ewa oloyin, it's one sweetest beans in Nigeria. Now, let me just give you one tip I learnt from my grandma I noticed she uses lots of onions to cook ewa oloyin. So basically, onions is key in cooking beans.
