Gizdodo is a sumptuous Nigerian delicacy best served at the comfort of your home or any occasion. It's a fusion of gizzard and dodo(plantain), it can be stir fried or stewed whichever of your choice but, I prefer stir fry and can also be eaten alongside jollof or fried rice, coconut rice or plain white rice. Hmm yummy! You'll love the sweetness and crunchiness, trust me. Below are ingredients and preparations.
INGREDIENTS:
450g Gizzard
3 ripe Plantain
1 large Onions
2 cloves Garlic
2 Stock cube
1 medium Tomatoes
1 each Green and red pepper (tatashe)
1 Scotch bonnet
1 Yellow bell pepper
1/2 teaspoon Salt
1/2 teaspoon Thyme
1/2 teaspoon Curry
1/2 cooking spoon Vegetable oil
PREPARATIONS;
1. Wash gizzard thoroughly and remove those yellowish lining, eew...lol! And then cut into smaller sizes.
2. Place the gizzard into the pot, pour water upto half the level of the gizzard and season it with onions, garlic, stock cube, curry, salt and pepper, then cook until it's soft or tender.
3. While cooking the gizzard, cut the dodo (plantain) into cubes and fry in hot vegetable oil until it turns golden brown. You can as well fry d Gizzard in the same oil.
4. Also chop onions, bell yellow pepper, tomato, green and red pepper.
5. Heat up vegetable oil in a saucepan, fry the onions, garlic, yellow bell pepper, tomatoes, scotch bonnet, red and green pepper.
5. Season with salt, small volume of stock, stock cubes, curry and thyme and stir in the fried gizzard and add fried plantain and leave to simmer for few mins and boom the gizdodo is ready.
