COCONUT ICE CREAM!

                                       Amazing coconut ice cream, insanely creamy, quick and easy to make and very rich. Hmmm yummy! what more can you ask for. INGREDIENTS : 3 cups coconut milk 3 tins evaporated milk  2 tbsp. custard powder or cornflour  2 cans condensed milk Vanilla extract.  METHOD : 1. Combine coconut milk and custard powder or cornflour, cook over low heat stirring continuously until thick and smooth. 2. Sweeten to taste with condensed milk 3. Flavour with vanilla extract  4. COCONUT SHORTBREAD!

                      Coconut shortbread is something you'll always want to do over and over again. Just try it and thank us later. Ingredients: 1 cup or 8 oz butter  1/2 cup castor sugar 1/2 tsp salt 1 egg  3 cups flour 1 cup grated coconut 1-2 tbsp castor sugar (for dusting)  Method;  1. Cream butter well 2. Add sugar, salt, egg, flour and coconut, mix well and chill for 1 hour. 3. Roll out dough in 2-3 circles, 1/2 " thick on an  ungreased baking sheet or pie plates. 4. Crimp edges, prick top with a fork and mark a wedge shaped pieces. 5. Bake in preheated oven at 300 degrees F.  for 45-50 minutes (shortbread should be pale brown after baking). 6.
