Egusi soup is unarguably one of the most consumed soups in every household in Nigeria, it is rich in fats and high in protein and you simply can't resist egusi soup with Eba, semo, pounded yam (eyan), fufu(akpu) and so on. Below are health benefits, ingredients and methods of preparation.

78 % of the fat is unsaturated fatty acid, which is protective to the heart.
The alpha-tocopherol found in egusi is a component of vitamin E that helps in maintaining smooth young skin and good fertility.
It also contains palmitic, stearic, linoleic and oleic acids important in protecting the heart.
The egusi can also be an important supplementary baby food, helping prevent malnutrition.
Blending the seeds with water and honey produces a milky liquid that can be used as formula if breast milk is unavailable.
Ingredients:
Original palm oil or red oil
Grinded dry pepper
Salt to taste
2 Stock cubes
Stock fish
Dry fish
Crayfish
Smoked fish
Pomo
Assorted meat or beef
Beef stock
Onions
Ugu
Method of preparation:
Step1. Wash meat thoroughly, season and and bring to the boil.
Step2. Pour red oil in the pot and place on fire (allow to fry for 1or 2mins) and lower the heat.
Step3.Mix the egusi with the oil with low heat and stir gently. (Now scoop out aside)
Step4. Wash the dryfish, smoked fish, and stock fish thoroughly. And pour in the pot alongside the beef or assorted meat.
Step5. Pour d beef stock in the pot, and add egusi, grinded pepper, crayfish, Pomo.
Step6. Season egusi soup with stock cubes, salt and stir, cover and cook on low heat in other not to get burnt.
