Moi moi (bean pudding) dessert Tuesday!!!



Moi moi is a Nigerian steamed bean pudding (dessert) made from a mixture of washed and peeled beans, onions and fresh ground peppers (scotch bonnet). It is a protein-rich food mostly consumed all over the country. It originated from South-West Nigeria, it is often called "moi moi elemi meje", which translates to Moi Moi with 7 lives. Moi Moi usually comes in a slanted pyramid shape or a cylindrical shape, owing to the mold it is poured into prior to cooking. The pyramid shape comes from the traditional broad
 "ewe eran" (Thaumatococcus daniellii).
Ingredients:
>Fresh fish (optional)
>7 Cooked Eggs (optional)
>Half cup of vegetable oil or palm oil 
>Stock cubes (seasoning, 2 to 3 cubes)
>Salt to taste.
>3 bulbs of onions 
>tatashe or shombo (5 to 10, just to give it an attractive reddish color)
>Crayfish (1 cup)
>3 cups of beans
>Corned beef
>liver (diced in cubes)
>shrimps

Method of preparation:
Step 1. Start by first soaking the beans in cold water until they are soft enough to remove the fine outer covering or peel. 
Step2. Then blend (using a blender) or commercial grinding mill nearby, blend to fine paste.

Step3. Add veg oil or palm oil in d mixture and stir gently, at this point u can also add water (the mixture must not be too thick and too watery)
Step4. Parboil the fresh /frozen fish, pieces the fish with your fingers, not really squashing still leave in bits and Add to the mixture.
Step5. Add little salt, stock cubes, crayfish, corned beef(note corned beef already has salt in it), shrimps,liver and mix gently.
Step6. Get moi moi leafs make pyramid shape and bend the leaf at the button, now pour the moi moi mixture and place sliced egg in each of every wrap you make (at this point as you wrap, place in the pot directly) 
Step7. Add little water in the pot and cook for about 40-45mins (add water subsequently in other not to get dried and burnt).
MoiMoi can be eaten alone or with bread as a snack, with white rice,jollof rice, fried rice as a meal or with akamu (pap) for breakfast or dinner. it can also be taken with garri in the afternoon.
